Green grapes and a chopped peach add a juicy burst of freshness to chicken salad. Instead of peach you can use almond & cantaloupe, cut the cantaloupe in half and fill this recipe into the “bowl” of cantaloupe. It was very good and filling.

Ingredients
  1. 1/3 cup plain fat-free yogurt
  2. 2 tablespoons fat-free mayonnaise or salad dressing
  3. 1 cup cubed cooked chicken breast
  4. 2/3 cup seedless green grapes
  5. 1 large peach, chopped (3/4 cup)
  6. 1 medium stalk celery, diced (1/2 cup)
  7. 1 teaspoon chopped fresh or 1/2 teaspoon dried mint leaves
Instructions
  1. In medium bowl, mix yogurt and mayonnaise until smooth. Stir in remaining ingredients.
  2. Cover and refrigerate at least 30 minutes until chilled.
