Chocolate caramel tartlets are sure perfect for parties, they are just the right size for finger foods. Make on their own or as part of a dessert buffet. Little cookies, mini lemon meringue tarts, etc. would be great with these. Not difficult to make but a bit time consuming, once you’ve made these you will return to this recipe time after time.

Chocolate Caramel Tartlets

Chocolate Tart Dough
  1. 1/2 cup (1 stick) unsalted butter, at room temp
  2. 1/2 cup plus 1 tbsp confectioners' sugar
  3. 1/4 cup unsweetened cocoa powder
  4. 1 large egg yolk
  5. 3/4 tsp vanilla extract
  6. 1-1/4 cups all-purpose flour
Caramel Filling
  1. 1/2 cup water
  2. 2 cups sugar
  3. 1/4 cup light corn syrup
  4. 1/2 cup unsalted butter (1 stick)
  5. 1/2 cup heavy cream
  6. 2 tbsp crème fraiche (sour cream or additional heavy cream may be substituted)
Chocolate Ganache
  1. 1/2 cup heavy cream
  2. 3-1/2 oz bittersweet chocolate, chopped (you may use semisweet if you prefer)
  3. Pinch sea salt, such as fleur de sel
Topping
  1. Coarse sea salt, such as fleur de sel, optional
