Oreo Stuffed Peppermint Cookies

Ingredients
- 1 cup butter (2 sticks or 226g), room temperature
- 1 1/2 cups granulated sugar
- 3 large eggs, room temperature
- 1 teaspoon McCormick peppermint extract
- 10 drops of McCormick green food coloring
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon table salt
- 12 ounces semi-sweet chocolate chips, divided (1/2 finely chopped)
