Cake
  1. ⅔ cup cocoa powder
  2. ½ cup boiling water
  3. 1 ½ cup cake flour
  4. 1 cup sugar
  5. ½ tsp baking soda
  6. ¼ tsp salt
  7. 1 stick unsalted butter, softened
  8. 2 large eggs, lightly beaten
  9. ¼ cup milk
  10. 1 tsp vanilla extract
Icing
  1. ½ stick unsalted butter, softened
  2. 6 tbs heavy cream
  3. 1 tsp vanilla extract
  4. 2 to 3 cup powdered sugar
  5. ⅔ cup cocoa powder
  6. 12 mini cookies
  7. 12 M&Ms
  8. 24 mini pretzels
  9. Marshmallows, chopped up
Instructions
  1. Preheat your oven to 350°F. Grease a 12 capacity muffin tin or line the holes with paper cases.
  2. Combine cocoa and boiling water, whisking until blended and smooth. Set aside.
  3. Combine flour, sugar, baking soda and salt in a large mixing bowl. Add butter and mix until the mixture is crumbly.
  4. In a separate bowl, combine eggs, milk, cocoa mixture and vanilla.
  5. Add the wet mixture ⅓ at a time to the dry mixture while beating on a low speed. Beat at medium speed for an additional 30 seconds until mixture is smooth.
  6. Spoon the mixture into prepared muffin tin.
  7. Bake for 15 to 18 minutes, or until a skewer inserted into the center comes out clean. Transfer to a wire rack to cool.
  8. To make the frosting, cream the butter until pale and fluffy.
  9. Add the heavy cream and vanilla extract.
  10. Slowly add the powdered sugar and cocoa powder.
  11. Add more powdered sugar and/or cream, depending on your desired taste and texture.
  12. Once the cupcakes are fully cooled, pipe the frosting on top of each cupcake.
  13. Use the mini cookies, M&Ms, mini pretzels and marshmallows (or any white candy) to complete the reindeer faces.
